Baking on a budget – Chocolate Rice Krispie Cakes

Hello everyone!

Today I am just sharing a simple baking post. Since I am a student I am always looking for money friendly ways to do certain things because as we all know being a student is very expensive. However, that certainly shouldn’t stop you from enjoying your hobbies and having fun with your friends. So today I have put together a cheap baking alternative which is really fun to make with your friends and very appropriate for the season! These Easter treats are so simple and really inexpensive to make. My friends and I had a fantastic time making them and they tasted so good as well!

Ingredients:

  • 120g of unsalted butter
  • 6 tablespoons golden syrup
  • 2 x 100g bar milk or dark chocolate
  • 180g Rice Krispies
  • 1x bag of mini eggs
  • Cupcake Cases

Method:

  • Break the chocolate up into small pieces and warm gently in 10-20 seconds intervals in the microwave until fully melted. (You can also do this in a saucepan on the hob).
  • Cut the butter into small cubes. Then add to the chocolate and stir thoroughly until everything is well combined together.
  • Next add the syrup to the mixture as well and stir until everything is mixed together.
  • Add the Rice Krispies and gently stir into the mixture until they are covered.
  • Spoon evenly into 18 cupcake cases.
  • Add two mini on top of each cake for decoration
  • Lastly leave them in the fridge to cool and set for 1-2 hours.

 

This recipe is seriously so simple, inexpensive and quick! I think they took us about 15 minutes, perhaps 20 minutes maximum to make. They taste so good and are in line with the theme of spring and Easter. As you can see from the ingredients, we didn’t purchase any really expensive ingredients. WE got the branded Rice Krispies because they were on offer and consequently cheaper than the others and the bun cases were also on offer making them the cheapest option. We used Smart Price chocolate and honestly they tasted just fine and it was 30 pence a bar! Don’t worry it works out just the same and still tastes good! The mini eggs were £1 a bag, of which we only need one anyway, so they wasn’t that expensive and I already had butter and syrup in but even if you didn’t they aren’t too expensive to buy either!
